Spicy Asian Cucumber Salad

The perfect blend of heat, acidity, sweetness, and aromatic. Its a refreshing salad that can serve as a side to any dish.
Ingredients

1 large Cucumber
Large pinch of Salt
1 Eschalot
2 Spring Onion (green part only)
2tsp Laffe Red Chilli Oil (or more if you like a good kick!)
2tsp Toasted Sesame Seeds
For the dressing
1tbsp of rice vinegar (or any clear vinegar)
2tsp of Soy Sauce
2tsp Sesame oil
Let's Make It
Smash & slice: Give those cucumbers a whack (we used a rolling pin) so they crack open, then chop into small, chunky bites.
Salt spa (30 mins): Sprinkle with salt and let them lounge for 30 minutes while they sweat it out. Drain off the water.
Shake up the dressing: Whisk the liquid ingredients together
Toss time: Finely slice the green onion and eschalots, then add them to the bowl with the sesame seeds, dressing, and chili crisp. Toss until the eschalots get floppy and happy.
