Ultimate Grilled Cheese Sandwich recipe

The ultimate grilled cheese recipe that has a hint of spicy, sweetness from the chilli jam. This is a quick and easy recipe but is incredibly satisfying!

Ingredients
Cheddar (grated)
Spring onion (sliced)
Mozzarella
Butter
Laffe Yellow Chilli Jam
White loaf bread (or your preferred bread)
Lets Make It
Preheat the grill to a medium heat.
While the grill is heating up, place the grated cheddar in a bowl with the sliced spring onion. Roughly rip up the mozzarella and add to the bowl. Mix together.
Spread around 1tsp of butter on one side of the bread and 1tbsp of Yellow Chilli Jam on the other side of the bread. Repeat with both slices of bread. Add the cheese mix on top of the chilli jam side of one of the slices of bread and then place the other slice of bread on top, chilli jam side facing the middle.
Wrap the sandwich in foil and place under the grill for 5 minutes. Open the foil to expose the top of the sandwich and then return to the grill for a further 2 minutes.
Flip the sandwich and then return to the grill again for a further two minutes. Repeat this until the sandwich is nicely golden on both sides.
Make sure you keep an eye on the sandwich because 30 seconds could be the difference between golden brown and charcoal! if the sandwich is browning too quickly but the cheese hasn't melted the cover again with foil.
Remove from the grill and cut in half. Enjoy!
