Caramelised Green Chilli and Coriander Potatoes Recipe
This is the perfect comfort side dish or snack with that sticky caramelisation and huge boost of flavour from the Green Chilli Oil.

Ingredients
3 tbsp Laffe Green Chilli Oil
10 New Potatoes
250ml Chicken/Vegetable Stock
2 Large Handfuls Kale (in shrinks don't worry!)
2tbsp Mixed Seeds (optional)
Handful of Fresh Coriander
Salt to Taste
Lets Make It
Heat a large frying pan on a medium heat with the Green Chilli Oil.
While the frying pan is heating up slice your new potatoes in half along their length.
Once the oil is hot add the potatoes, flat side down. Fry for around 5 minutes until the flat side of the potatoes' begin to turn golden.
Once they begin to go golden add the stock and then place a lid over the top. Lower the heat and allow to simmer for 15 minutes. Flip each potato over, add the kale and mixed seeds and then cover with the lid. Simmer for a further 10 minutes or until the potatoes are soft. If the stock is drying up before the time is up just add a little more water.
Once the potatoes are soft remove the lid and turn the heat up to medium. Allow all the stock to completely evaporate and keep stirring the potatoes. The potatoes will eventually start to fry again. Keep frying until they begin to caramelise and get a little sticky.
Place the potatoes into a serving dish and garnish with fresh coriander. Enjoy!
