Crispy Potato and Caramelised Onion Pancakes

This is a great, aromatic flavour bomb! It may seem like a carb overload but it definitely works!
Makes 2 Large, Thick Pancakes

Ingredients
150 chickpea flour
1/2tsp chilli powder
1/2tsp turmeric
180ml water
1/2tsp salt
For the topping
1 onion
1tsp butter
1tsp sugar
1 large potato
3/4tsp salt
1/2tsp black pepper
1/2tsp smoked paprika
2tbsp Laffe Green Chilli Oil
Let's Make It
Peel and then thinly slice the potato. The thinner the slices the crispier the potato. Place the slice in a bowl and soak in cold water for 30mins.
Preheat the oven to 200C. Drain the potatoes and evenly lay them across a baking tray. Dab them dry with a paper towel. Evenly sprinkle the spices over the top with a drizzle of sunflower oil. DO NOT add the Green Chilli Oil at this stage.
Place in the oven for 10mins and then turn them over. Bake for a further 15mins and turn again. Repeat this until the potato is golden brown and crispy.
While the potato is baking thinly slice the onion. Fry on a medium/low heat with a 1tsp butter for 5mins. as it starts to soften add 4tbsp of water to the pan. Place a lid over the pan and let the onions simmer until softened.
Add a little extra water if required. Once the onions have softened remove the lid and increase the heat to a medium heat. Add the sugar, stir and allow the remaining water to evaporate. Once the onions have dried out remove from the heat and set aside.
Making the Pancakes
Whisk all the ingredients together to make a smooth batter.
Heat 1tbsp of oil in a frying pan on a medium heat. Once hot, ladle half of the batter into the pan. Spread the batter around the pan and then allow to cook for about 2 minutes or until the bottom has started to brown.
Flip the pancake and then cook again for 2 minutes or until it has started to brown. Remove from the pan and then continue to repeat the process until you have finished the batter.
Serving up
In a bowl, toss together the crispy potato, caramelised onion and the Green Chilli Oil. Add any salt to taste.
Plate up the pancakes and then add the potato mix on top. Add any additional chilli oil if you wish and enjoy!
