Chilli Caramel Popcorn

If you love sweet and salty popcorn then this is the upgraded version just for you! Sweet, spicy, salty deliciousness in a snack. Our Chilli Caramel Popcorn Recipe is one to try and you can vary the level of spice by using our mild Green Chilli Oil or our spicy Red Chilli Oil.
Ingredients
2tbsp Oil
4 tbsp Popcorn Kernels
125g Caster Sugar
45g Salted Butter
Laffe Green/Red Chilli Oil

Instructions
Heat oil and popcorn kernels in a large pot over medium-high heat with the lid on. As soon as the first kernels start to pop turn heat down to low
Occasionally, shake the pan gently until the popping become less regular.
Remove from heat when the popping stops (when there are about 3 seconds between pops) and transfer to a large baking tray.
Caramel
Melt the butter in a large saucepan over medium-low heat.
Add the sugar and stir until just combined.
When it starts to bubble, simmer for 2-3 minutes stirring occasionally. Dont worry, it make look weird for a while but it should come together and start to look like caramel.
Once it becomes a light caramel colour remove from the heat and stir in the popcorn. Spread the popcorn onto a large baking tray and drizzle over the chilli oil.
Baking to crisp
Preheat oven to 120°C/100°C fan
Bake for 45 minutes, tossing every 10 minutes or so.
Remove from oven, leave to cool. Gently break into pieces and enjoy. The popcorn will stay crisp for 2 – 3 weeks!
